In this recipe, you won’t find coffee. Instead, we’ll play with delicate acidity and the intense aromas of handcrafted products from my lemon grove. The stars of the show? Our Espera Limoncello and the iconic Lemon Drops.
Quality ingredients for a Chef-level result
The success of such a simple dessert depends entirely on the quality of the ingredients. Using just any limoncello will never deliver the same aromatic persistence as Espera, made through slow, natural infusions. And for the finishing touch? Lemon Drops replace the traditional cocoa powder, giving the dessert a glossy, velvety finish and an explosion of citrus freshness.
Ingredients (6-8 people)
- 500g of Mascarpone cheese (or well-strained buffalo ricotta)
- 120g of Sugar
- 4 fresh eggs (or 250ml of whipped cream)
- For the syrup: 150ml of water, 50ml of Espera Limoncello, 1 tablespoon of sugar, fresh lemon zest.
- For the Base: 300g of Ladyfingers (but discover the alternatives below!).
- The Final Touch: 1 jar of Iolanda Busillo's Lemon Drops.
Not Just Ladyfingers: customize your base
Not everyone loves the classic texture of ladyfingers. The beauty of this tiramisu lies in its versatility; you can switch the biscuits to create completely different textures:
- Pavesini biscuits for lightness: If you’re after a cloud-like dessert, Pavesini absorb less syrup and make the tiramisu incredibly delicate.
- Digestive Biscuits for a Rustic Twist: These create layers more similar to a cheesecake. Their subtle salty note enhances the lemon aroma beautifully.
- Almond Cantucci for a Gourmet Effect: Use crumbled cantucci for a crunchy contrast. The almond-lemon pairing is a timeless classic that will leave your guests speechless.
Step-by-Step Method
- The Citrus Syrup: In a small saucepan, heat the water with the sugar and lemon zest (preferably from our lemon grove!) until the sugar dissolves completely. Turn off the heat and, once lukewarm, add the Espera Limoncello. This way, you preserve the full intensity of the liqueur.
- The Lemon Cream: Whisk the egg yolks with the sugar until pale and fluffy. Fold in the mascarpone one spoonful at a time. Here lies the secret of the recipe: add our Lemon Drops directly into the cream mixture, stirring thoroughly to blend the citrus essence into the mascarpone base. Finally, gently fold in the whipped egg whites (or whipped cream) using slow upward movements to keep the mixture airy.
- Assembly: Quickly dip your chosen biscuits into the syrup and create the first layer. Cover with half of the lemon-enriched cream.
- Finishing Touch: Repeat with another layer of biscuits and finish with the remaining cream. Smooth the surface and decorate as desired with lemon zest or fresh mint.
One final tip
Let the tiramisu rest in the refrigerator for at least 4–6 hours. This step is essential: it allows the biscuits to absorb the essence of the Espera Limoncello while the cream becomes firm, fragrant and perfectly balanced.
