The scent of the Sun in the Sele Plain: the legend of Limira and Her enchanted Pesto

There are afternoons in Campania when the sky is so clear that the boundary between the sea and the horizon disappears. In those moments, if you wander among the orderly rows of a lemon grove in the Sele Plain, you may sense a gentle rustle, like a breath of wind scented with orange blossom. Popular tradition tells of Limira, the fairy of the Sun and Lemons, a luminous creature who guards the secret of the South's yellow gold.

It is said that Limira dances among trees heavy with fruit, touching the rough lemon peels with her finger to infuse them with the pure light of morning. It is from this magical inspiration that our Lemon Pesto is born: a radiant condiment that captures the freshness of citrus fruits, the sweetness of almonds and the creaminess of cashew. A recipe that is not just food, but a fragment of sunshine transformed into a cream, naturally lactose-free and gluten-free, available in two sizes, designed for every occasion: the 85gr jar, perfect as a gourmet gift or a tempting taste and the 130gr jar, ideal for more generous lunches.

Today we want to honor this legend by bringing Limira’s solar spirit into the kitchen with a first course that smells of celebration and Mediterranean summer.

The Recipe: "Ray of Sun" Linguine with Lemon Pesto and Shrimp Tartare

This dish is an ode to refined simplicity: the creaminess of the pesto envelops the pasta, while lemon juice releases vibrant notes that enhance the natural sweetness of the seafood.

  • Difficulty: Easy
  • Time: 15 minutes
  • Mood: Elegant yet convivial

Ingredients for 4 people

  • 320 g Gragnano linguine (or gluten-free version)
  • Limira Lemon Pesto (one 130 g jar is the perfect amount for this quantity)
  • 12 very fresh red shrimps (or prawns)
  • Toasted almond granules, to taste
  • Campania extra virgin olive oil
  • Fresh mint or lemon thyme

Method

  1. The wait:While the pasta water comes to a boil, clean the shrimp. If you enjoy contrasts, leave them raw and season with a drizzle of extra virgin olive oil and a pinch of salt; alternatively, sear them for a few seconds in a very hot pan.
  2. The alchemy: in a large pan, pour the Lemon Pesto. Do not heat it too muc, its beauty lies in the freshness of its oils. Simply add a ladle of pasta cooking water to loosen the density of the almonds and cashews, creating a silky emulsion.
  3. The union:Drain the linguine al dente and plunge them into the golden embrace of the pesto. Toss over high heat for one minute, allowing every strand of pasta to absorb the scent of the lemon grove.
  4. The final touch:Plate the pasta in a spiral, place the shrimp on top, and finish with the toasted almond granules, which will add a crunchy note to every bite.
